Y’all I can not tell you how excited I am to write this review of Blaze Fast-Fir’d Pizza! But before we launch into what is going to be a love fest (scary for us gluten free folk perhaps, but love fest nonetheless), let me warn you… DO NOT READ THIS REVIEW HUNGRY. I repeat if you like pizza (aka are you human?) do not read on an empty belly!
Blaze Fast-Fir’d Pizza in Disney Springs is one of a smallish chain, by smallish I mean they’re no Starbucks but there’s quite a bunch of them around the country. I’ve gotten to experience both the Disney Springs location and the Jacksonville location and while I can say both are absolutely delicious, I think there might always be something a little more magical about anything in Disney.
Let me get the allergy scares out of the way before launching into the delicious. I have NEVER gotten sick from Blaze. I am usually a pretty sensitive person and have eaten at Disney Springs Blaze at least half a dozen times and have never had a single problem beyond anxiety. Here’s the thing. If you go in at low hours they usually take you over to the second counter to prep your food, pull out separate ingredients, no concerns. However, during peak meal times they make your allergy food right there on the line with the regular items. They’ll pull out fresh ingredients and do a glove change and there’s definitely some protocols going on (gluten free is on a special black mat). All of that said, it gives me heart palpitations (I’m not joking, it really does) to have my food less than an inch away from a gluten crust pizza. As you can see in the picture, the line is truly a hot mess, it makes me very uncomfortable. BUT, as I’ve said, I’ve eaten plenty of times and not a single digestive complaint (other than maybe over eating). So, if you’re gluten intolerant like me, use your judgement, if you’re really not comfortable then come back at low hours but my two cents is, I’m going to trust them and the history I have with the place until I have a reason not to (and I’m going to make sure eh-very-one on the line knows I have a serious allergy in the process because that always helps my nerves).
Okay, so back to the food! One of the great things about Blaze is it’s totally customized. You pick everything you want from the sauce to the cheese to the toppings and can tell them more or less of anything. They assemble it right there on the line in front of you and then fire it in the oven. (Worth noting, the GF pizza takes like 3 times longer than regular, I always tell friends to eat without me or to order a few minutes after me).
GLUTEN FREE TIP!!!! GO LIGHT ON THE SAUCE!
One thing I’ve learned is to go REALLY light on the sauce with GF crusts, as light as they’ll do. It makes a really huge difference in how crisp or soggy the crust comes out. Asking for light sauce has really turned pizza from a “I guess it’s okay ish” experience into an all out love-a-palooza for me, it’s the only way I’ll eat it now!
My favorite pizza starts light on the red sauce (of course) then shredded mozzarella, ovaltini (fresh mozzarella), parmesan, more parmesan, garlic, sometimes bacon and then a pesto drizzle after it’s fired. See all that sauce on my pie? That’s LIGHT sauce on a GF crust, trust me, go light!
I’m going to let the pictures speak for themselves but just trust me on this, it tastes even better than it looks. Hard to believe but true!
Besides how amazing the pizza is, especially gluten free, I also love Blaze for the location. It’s right on the incredibly blue waterway in Disney Springs, always has good music, and is just an overall great atmosphere. This is definitely a place I could (and will when we move!) set up my laptop and spend a few hours.
